  2. I can't get you a link but horses stats will stay the same. So if you find one in the wild and egg it, the stats will stay the same. If you buy an egg from the /shop , the stats are random. You can also ride you horse and do commands ( /v random, /wild ) and the horse will stay with you.

    In most MMORPG's these are usually special mounts that aren't easily obtainable. I think it would be cool if Aikar implemented something like that.
