Here are the trades that I eventually got after many tries of eggifying the villager! Looking for someone to trade a totem of undying for 2-3 DCs of potatoes or carrots!
I would be willing to do that, just a few days until I can get back online though. I will set up a chest!
Once you've converted the carrots/potatoes to emeralds, I'd be willing to trade them for some enchanted tools or gear.
??? just drop it into one of the access chests that i set up, when you empty out some carrots and potatoes. Much easier.

If you are still up for the trade I have 814 emeralds (please check my math). I also have 4 pumpkins, 5 melons, 6 potatoes, 6 carrots, 56 cookies (was also a trade from my villager), and ironically 3 cakes (was also a trade from my villager) for trade! Looks like we made it full circle and THEN some!

I think the public farm rule is kind of dumb. Basically infinite resources, ruins the feel of it. Like how you just got 814 emeralds from nowhere basically, and that got you a really good pickaxe. You skipped a huge part of the trading with it, the gradual progression, and instead are basically starting with pretty valuable stuff already.
I traded for the villager from the sheep and traded for the crops from the totem of undying. Then I used those trades to trade for emeralds and finally tools. I don't see anything wrong with that.
Oh mb, i missed the part where you traded the totem for crops. I thought you just public-farmed for them.
