Turns out, they're not as hard to fight as I thought. Just make a room near bedrock and an impression in the wall for it to spawn in. Have a few potions like regen and strength applied, run away as soon as you place the last head, rush back in after the explosion and attack. Took about 30 seconds for me and some friends to kill one.
This isn't just an individual Wither Boss we are killing. We are going to kill a lot of withers and have a thriving business of Wither Skulls and Nether Stars.

MVPdrose is right, I can take no hearts damage with a diamond sword, diamond armor, and an enclosed area. It's quite easy and simple.
when we kill the wither bosses can we keep some wither stars?? or do we have to sell all of them and the heads?
What we're going to do is get the Nether Stars and Beacons for ourselves, and when each member gets one or two, we will start selling nether stars or beacons to Empire community.
