Think of it this way: you can easily make all your money back from every tool you buy as long as you work hard with them (especially the pick).

Any idea at exactly what time these items will become unavailable?

Seeing as it says Sunday, I'm guessing the beginning of, so at 00:00am

I can see someone buying a whole set, then in like 6 months, or whenever they get used up or out of circulation, selling them for like a million rupees or something

Exactly where several hundred thousand Rupees went.
There is however, going to be a price cap with these because they can't be repaired. So you will only ever make marginally more than 6k based on how much you get from, say, the Ore Buster.
Or, if another rare Ore is released, even better.
