For those who don't know what I mean when I say rollback, on your Minecraft Launcher start page, select installations and then select "New Installation". Select the 1.17.1 version, add a name to the Installation then select done to save the new profile you just made. Now you can now choose the 1.17.1 Installation and paly it.
Very informative and yes I did this when I noticed it had updated and couldn’t connect. However I sense a little sarcastic note with that roll back. Could be just be I’m sure anyone who isn’t new knows how the server runs. I can’t speak for how other servers roll since I only play on EMC but I’m glad the devs try to work the kinks out so we have a smooth transition of play when the server updates.

Nah, I don't think that's going on at all. Moreover, not a single server with custom plugins can update to a new major version in a matter of days. And lots of servers are still on 1.12 or on 1.15, probably. Anyway, I thought there was a sticky guide for how to do this, but I can't find it, so I guess not. Ah, isn't it usually in the alertbox below the header?
Actually, the work to update for Fabric-based servers is not too much at all. More modern servers will tend to use Fabric over Paper from what I've seen, because of performance mods like Lithium. https://update.emc.gs
