If you're very far out, you might try to obtain a leather worker villager. (First trade will be leather for emeralds.) On their fourth trade they should provide saddles. Good luck.
Hmmmm... How far out? I used to spend hours going across the Empire map after wandering too far - It sounds like fun! Reasonable price? I would like whatever you call reasonable, and a signed book. If you give me the instructions I'm excited to do something like that!
A faster way, if you got the slots would be to buy saddles on another smp and summon some horses in town. Then saddle them up and store them. Then summon them again at your outpost... tada !!! Semi instant saddles..
