I have adjacent plots, and I have a villager on one that I want to move next door. I will be doing multiple between res edits, so that's not really an issue. My question is, is there a way to move my villager nextdoor while making the between res edits (say a water conveyor/minecart?) I know mobs sometimes wander and return to where they are spawned. Will this happen? or can you kill a villager (say by fall damage) on a res? I just want to make sure the journey will be safe before I start planning it. Thanks!
You can't transfer mobs between residences. This was made impossible because people used to steal each other's animals.
No, but you can right click a stick on it to eggify it. And then spawn the egg on the res you want to.

Correct. Although, I have made a ticket somewhere on our issue tracker. To somehow let animals be moved to a different residence when attached with a lead. Not currently being developed though
I would just like to point out that it is much cheaper to just make an eye of ender than to trade for one.
In actuality it is cheaper to just buy the eye of ender, so jkjkjk is right. Think of it this way: You have a 7-emerald for one eye of ender villager. The price of one is, what, 20r at most? So you're spending 140r worth of emeralds for something worth 20r. That's a 120r loss. Now, you can either trade directly for the eye of ender and lose 120r (approximately) OR you can sell the emeralds for 140r, then buy the eye of enders for 20r per. You won't just save money, you'll make it too. To sum up: 120r saved by selling the emeralds to a shop and buying the eye of enders.
