  1. I just baked some pre-cut cookies with my nephew and that got me thinking about recipes and sharing said recipes.

    Please share your cookie recipes and if you don't have any recipes just share your favorite type of cookies and maybe even where your favorite cookies come from.

  2. Here's a recipe to get us started.

    Chocolate chip cookies


    Ingredients

    for 30 cookies

    • 2 cups butter, melted
    • 2 cups brown sugar, packed
    • 2 cups granulated sugar
    • 4 large eggs
    • 1 tablespoon vanilla extract
    • 5 cups all-purpose flour
    • 2 teaspoons baking powder
    • 4 cups chocolate chips

    Preparation

    1. Preheat oven to 375°F (190°C).
    2. In a large bowl, whisk together the brown sugar, granulated sugar, and melted butter, until evenly combined and light in color.
    3. Add in the eggs and vanilla, mixing until smooth.
    4. Add the flour and baking powder, folding the mixture until it forms a smooth dough.
    5. Fold in the chocolate chips until evenly combined.
    6. Using an ice cream scoop, scoop 6 balls of dough onto a baking tray lined with parchment paper.
    7. Bake for 12 minutes, then serve!
    8. To save cookie dough for later use, scoop the dough into balls and place them side-by-side on a baking tray lined with parchment paper.
    9. Wrap the tray with cling wrap, then freeze for up to one month.
    10. To bake the frozen dough balls, remove desired number from the tray and bake in a preheated oven for 15 minutes at 375°F (190°C).

    Ingredients

    • 2 medium ripe bananas
    • 2 scoops (60g) unflavoured whey protein powder*
    • 1 cup rolled quick or old fashioned oats
    • 2 tbsp peanut butter, unsalted
    • 2 tbsp chocolate chips, mini
    • Cooking spray (I use Misto)

    Instructions

    1. Preheat oven to 350 degrees. Line large baking sheet with unbleached parchment paper or silicone baking mat, and spray with cooking spray.
    2. In a medium bowl, mash bananas with a fork. Add whey protein powder, oats and peanut butter; stir well to combine (batter’s consistency will be runny). Add chocolate chips and give a few more stirs.
    3. Spoon mixture onto prepared baking sheet (cookies don’t spread, so shape them now) and bake for 12-14 minutes (depending on size). Cool on a cooling rack for 5 minutes.
