You could make an airport with a plane out side of it :)
Make a colosseum :)
Make atlas lifting a roman building
You could make a Giant NPC village or a replica of where you live ( Like town )
Make a pixel art you fighting off mobs

I'm on smp6 most of the time so if you need a spawner set-up I can do it cheap or give you instructions on how to do it free.
