I've got to say I didn't see much else! I didn't go looking for it either, but normally April Fool's Day is all over my subscriptions on YouTube... :/
On youtube I've seen April Fool's from Overly Sarcastic Production (but was not really a prank), The Operations Room (this one actually got me for a second), and if we want to count it, Bad Ossession Motorsport with a gag reel.
